In India I never used to cook but that doesn't mean I was not helping my mom. In India there are few food items which you always like outside like pani-puri, dahi puri(any chat), baigan bharta, daal batti etc. The list is long and the trip to India too. My mom always used to make everything at home so she can modify according to our taste. These are the things which you like to eat in Dhaba. Out of all one of my favorite item is Dal Batti. Dal-Batii is originally a Rajasthani food made in firewood. You can say Rajasthani food can never be completed without this particular dish.
My love to this dish called on me one day so I asked my sister for a recipe. Now I make this dish very frequently...
***Baati***
2 cup whole wheat flour (gehun ka atta)
1 cup semolina (rawa)
2 tablespoons Bengal gram flour (besan)
Oil/Ghee
Salt
Baking soda
-Mix all the ingredients and knead into a firm dough. Knead well for 5 to 7 minutes.
-Divide the dough into 10 equal portions and shape each portion into an even sized round. Flatten the rounds lightly using your thumb to make an indentation in the center of the baati.
-Pre heat over for 5 min on 400 F. Put all the battis in pizza pan/aluminum foil.
-Change the side of battis in between.
-Cook battis almost for 45 minutes.
-You are suppose to put Battis in hot Ghee. I don't do that, I just add Ghee when I am eating them with Daal.
***Dal***
2 cup Udad dal
1 cup Mung dal
1 cup Chana dal
-Clean and wash the dals and cook it in pressure cook(almost 3 whistles or till the dals are cooked).
-Make sure to remove white water created by Udad dal(before putting it in cooker. I simply put Udad dal in water and almost boil it. You will see white water, just remove that).
***Tadka***
Oil
Cloves
Cinnamon
cumin seeds
Mustard seeds
ajvaen
Ginger
Garlic
Kari patta
Green chilly
asafoetida
-When the cumin and mustard seeds crackle, add onion, tomato. Cook it for some time.
-Add boiled daal in it(Don't make a paste of mixed boiled daal).
-Add salt, chilly, haldi, dhaniya powder as per your taste.
-Add Coriander at the end.
***Enjoy***
-Break battis in small pieces and Pour hot dal over it to enjoy the taste of Rajasthan.
-You can add Ghee in it too.
-And also you are add spicy garlic+onion+tomato paste.
-Enjoy the baked-rich food with Papad
***Churma***
-Break batti in really small pieces
-pour Ghee in it
-Add jaggery in it.
Enjoy the authentic Rajasthani food...
